render (a "lexing error") however the TeX is perfectly
legitimate.

Use mbox, not mathrm:

:\mbox{ö}(x) = x^2/2
:\mbox{ö}'(x) = x

now in graphical

:\mbox{ö}(x) = x^2/2\,\!
:\mbox{ö}'(x) = x\,\!
