Unless I'm missing something here, they already do. They appear in the category bar at the bottom if you have "show hidden categories" enabled, and they are listed under "This page is a member of X hidden categories" just above that even if you don't.

oh, my mistake. New hidden categories that are added to the page are not then reflected in the preview. That should be changed.
