I receive spam to this email address that I don't use for anything else. I would like to have my email address hidden from at least anyone who is not logged in here.

Because I don't want spam? Because I don't want so set up filters when not necessary? Because I don't want to confirm more auto spam filtering? Because other sites are capable of hiding email addresses?
Your quarrel is with the bugzilla software, not us.

If you don't use this email address for anything else, why don't you simply enable filter like "if mail is from bugzilla-daemon@mail.wikimedia.org keep else throw away"?

Users who comment here should not be subjected to spam. It's simply doing what most websites do with email addresses and muddling them up so spambots can't get them.
