When you asign a category or a page to other category, you can asign also a sort
sequance diferent from the page name.

The problem is when you don't do that, or if you do and what to change that, it
will not be considered at all by the mediawiki engine.  The only work around is
to delete the page from the category and readd it again after.

I can tell you this user-non-friendly issues are VERY high priority on
WIKIBOOKS, because it keeps people from doing usefull thinks like on the
Cookbook, where poeple can't or don't know how to change the name of the
categories or crate categoris without conflicting with other Wikibooks....
