Currently, clicking the signature button adds two hyphens before users'
signatures. It may or may not look a bit more professional if a real em dash
could be used instead of two hyphens.

Em-dash conversion is already covered by bug 1485.

I was about to make the following comment when i got a mid-air-collision message
from bugzilla
 
  there is the slight issue that iso-8859-1 doesn't have that charactor
(confusingly 
  windows-1252 which a lot of programs claim is iso-8859-1 does)

  because of the way signatures are used they should ideally look nice in the
edit box 
  as well (talk pages get edited a lot remember) and using an entity (either by
name or 
  by code point) would make that a bit messier

  therefore i would advise holding off on this until such time that we switch
completely to utf-8

however having read Bug 1485 it seems that is a far more sensible soloution anyway.
