Instead of viewing changes site wide, perhaps a way of viewing changes that are
specific to a category would be possible... Would be great for, say, larger
Wikiprojects where there are just too many articles (and sometimes new articles
added) for you to add them all to your watch list.

You can already watch such category related changes by using e.g.
http://en.wikipedia.org/wiki/Special:Recentchangeslinked/Category:Elephants
