There should be an option on preferences to allow dates linked as [[July 21]] to
appear as plain text. This would make date formatting much more seamless and
elegant.

I think the option should be a series of radio buttons, like this:

Dates should be rendered as:
(o) Not Linked.
( ) Linked.
( ) Linked only on first appearance in article.

Of course the text could be different.

I don't think that's very likely to be acceptable, as this would make explicitly 
specified, purposeful links break.
