Someway, somehow there should be a link to the mobile version (configurable of course) in the interface of the mediawiki software. Perhaps under "Printable" or something.

I don't think such thing should be in MediaWiki itself, but rather an extension that can use the "SkinTemplateToolboxEnd" hook to add the link since a "mobile version" is more or less Wikimedia specific.

https://en.wikipedia.org/wiki/Main_Page as a link at the very bottom which points to the mobile version.  The link is added by the MobileFrontend extension.
