When you use the verbatim or lstlisting environment in a LaTeX document you don't want it to be highlighted as LaTeX code. Since this code isn't executed as LaTeX, the best would be to give it a single colour like is done in the kile editor.

I'll give you two links where you can compare highlighted code as the GeSHi does it and the kile style.

This should be filed upstream against GeSHi, not here.  We haven't forked GeSHi and aren't likely to do so.
