When you use the verbatim or lstlisting environment in a LaTeX document you don't want it to be highlighted as LaTeX code. Since this code isn't executed as LaTeX, the best would be to give it a single colour like is done in the kile editor. This should be filed upstream against GeSHi, not here. We haven't forked GeSHi and aren't likely to do so.
