I would love to be able to limit (both min and max) the number of instances of multiple-instance templates within a form.

(I am, of course, assuming that the feature doesn't exist already - I may have simply missed it, although it doesn't seem to be described in the docs.)

It doesn't exist, and it would be a good idea - it's been discussed for a very long time, but no one's ever written the Javascript for it.

This was actually added in SF 2.5.3, with the "minimum instances" and "maximum instances" parameters. It only took four years!
