I want to get the old version of the category page, but I can't edit the history
versions of the categories!

Looks fine to me.

If there's still a problem please provide more information, such as a description of what you expected to see and do and a detailed 
comparison of how that differs from what you actually see and can do.

If you're looking for historical category membership, you won't find it. The
list of pages in a category is generated dynamically at the time the category
page is requested.

I would consider that a feature request, then.  It would certainly be useful.

Beside "historical category membership" mentioned at comment 2 the url contains
also templates (which might have changed in the mean time; see bug 851). The
"historical revision" of the page in the category namespace is shown in the
"actual" context.

MediaWiki features (rendering, special pages etc.) are mainly focusing on
relations between "actual" objects (page titles, new / deleted pages, new /
expanded MediaWiki features etc.).

At bug 851 comment 6 Brion stated "Not implementable." In my opinion this
applies here as well.
