The current logo for Volapük Wikipedia (vo.wp) already exists in Commons under the name Wikipedia-logo-vo.png . As we are cleaning up the local image repository to use exclusively images from Commons, would it be possible to point the logo image to the one in Commons so that the local one may be deleted?

Why do you want to delete the local one? There's no reason to do so.

We would like to eventually have no images in the local database just like the Spanish Wikipedia, which uses the logo from Commons.
